| Yes, Philippa. Patronized. Check your own wording when it comes to that. You know, your mansplaining of just about everything. If you prefer, let's call it pedantic. Maybe a touch of superiority. As if nary a one of us has given any thought to any of the issues you obviously care so deeply about. Sorry you didn't realize we did savory in Chiswick. We did for about 14 years. With menus. And events all based on savory foods. Specsavers appointment maybe? Venues can't re-invent menus daily. There is actually waste generated from that alone. Not to mention inconsistency, customers wanting what they know and like, and a level of talent with staff that is extremely rare to come by if at all. One reason why multi-nationals can afford high street rents is because they are able to maintain a level of standard and consistency that is predictable when doing the maths to cover costs. Your suggestion of free-styling eradicates that predictability and thus the security of forecasting and basic supply/demand. Not feasible in the best of times. FYI, this is the worst of times. |
