A chicken carcase would go into the food waste bin. 

You can wrap it separately in newspaper but even better is to make stock for chicken soup out of it first (the slow cooker is the easiest way I have found of doing this) and then it will soften and start to fall apart so there will be less volume without having to chop it up. 

You can't beat home-made chicken stock and it is worth just making stock and freezing it in a block so that you have some ready for when someone has a dreadful cold - if you don't use it when making a risotto with the left-over meat from the chicken.
