The other thing northern F&C shops do differently is removing the skin from the fillets. I couldn't believe it when I had my first southern fish and chips and found they left the slimy skin that ruined the batter. I have to say though that northern F&C have deteriorated significantly since I were a lad. I put it down to the lack of throughput - Saturday lunchtime in the 60s / 70s you would queue down the street outside the chippy whereas now you go straight to the counter to be confronted by some dried up old fish that has been fried hours ago :-( |
