Andy, I am on a low purine, low potassium diet as well ( a s*d as I love shellfish and bananas - not together!) Try this Brown off some boned chicken thighs Add a bunch of spring onions, a couple of stalks of celery, a tin of cannellini beans(these are low GI)a tin of chopped tomatoes and a seeded red chilli. A splash of Worcester sauce adds a little extra kick. Bring to a simmer and cook for 30-40 minutes until the chicken is cooked through. All is low potassium and low GI. You can even leave out the chicken and substitute aubergines (reduce the cooking time). It is tasty, really tasty if you double up on the chilli! |
