Yes, it can all happen very suddenly.  Fine if you have been saving for years but if you haven't - eg if you have only had the animal a short time - it can be very hard. The other thing some pet owners don't realise is that once you have made a claim with one company, if you try to move to another they won't cover that condition or anything related to it.  So if you took your pet in with a dodgy stomach it is likely all stomach-related issues will be excluded.  So it is very important to try to find the right company to be insured with first time round and only try to move if you have not had to take your pet to the vet for any illness.
