Bobby, I used to make soda bread a lot, and I remember that on one occasion I had no buttermilk, so soured ordinary milk with a splash of vinegar - it curdled instantly.  When I tasted the cooked loaf later, the flavour was sensational -  I checked and found I'd used tarragon-flavoured vinegar and from then on I never bothered with buttermilk. 

I suppose you could use any flavoured vinegar to sour the milk, so buttermilk isn't strictly necessary.
