| It's not possible to like a post on this forum but Chris's response would have got one from me. With regards cooking temperature of beef burgers, Steve may actually be right this time. Apparently it makes little difference about the quality of the meat. Mincing meat increases the surface area and exponentially increases the chance of bacteria developing because it can get more air. You can have your burgers cooked medium rare at home if you want but a restaurant in the UK will usually give it to you cooked to a temperature of 160 degrees fahreinheit. If I recall correctly The Swan got in trouble with the hygiene inspectors for offering burgers under this temperature even if it was what the customer wanted. |
