Eggs, butter and cream are not substituted with sugar in vegan cooking/baking - more often than not, soaked and pureed cashew nuts are used as a creamy, healthy replacement for those ingredients, and rather than using sugar, health-conscious vegan recipes use alternative healthier sweetners such as agave nectar (lower GI than sugar), coconut nectar, date syrup etc., or at the very least unrefined sugar which is healthier than the white sugar in so many regular puddings.
