@ Curzon. Well yes, but not according to the Michelin-starred chefs observing said technique! Although you are right, they can be cooked this way, I doubt that's the elementary technique most people are taught. @ Anne. Yes, sadly it might have been. The transformation once they'd had a little coaching was nothing short of miraculous. My concern is really how could they have got through minimum of 2 years at college without learning these very basic techniques, or any real knowledge about ingredients. Similar to your story was the young lady frying shallots and stirring risotto with a metal palette knife. |
