Laura, please don't pay 'over the top' wages for someone to do work for you - it just 'spoils' it for the rest of us who pay the going rate.  £12 - £15. is the 'going rate' for a knowledgeable garden, and even that I find now over the top!  If you are going to give the instructions, you are doing half the job, so whoever you employ like that is unskilled or unknowledgeable!  But it's your money! but do think of the repurcussions!  It doesn't take an egg head to  prune a wisteria - especially if you are around.
