Whilst we're on the subject, I came across this recipe for Cormorant a while ago. First catch your Cormorant. Hang it by the feet using strong wire, soak it in petrol and set it on fire. This will clean it of lice and remove the feathers. When the smoke and smell of burning has subsided, cut the bird down and cut off the beak. Dig a 2-3 foot hole, preferably in a light sandy soil, and bury the bird for a period of not less than two weeks. This tenderises the meat and reduces the strong taste of rotting fish. After 2-3 weeks, dig up the bird, skin and draw it. Place into a strong salt solution for a minimum of 48 hours. Remove, dry, and stuff with a dozen roughly chopped onions, 3 or 4 bulbs of garlic, and a handful of strong chili peppers. The onions and chilis will bleach the meat so that it develops a dark brown colour instead of its natural black. Dissolve 2 tablespoons of chloride of lime into 8 pints of seawater. Simmer the bird for a minimum of 6 hours to tenderise. Remove, and allow to dry and cool. Mix up a stiff paste of methylated spirits and the hottest vindaloo curry powder you can find. Spread this paste liberally all over the bird. Roast in a hot oven (180 minimum) for 3-4 hours. Once it is well and truly cooked, take it to your local tip and throw it away. Not even a starving vulture would eat it. |
