This may be what some consider the logical evolution of the industry: ghost kitchens. During the past 16 months there have been stories where kitchens are being used to develop and distribute food not on in-house menus. Indeed, The Italians had done so and I believe Napoli is still doing so. Either way, many believe with delivery here to stay and growing because or regardless of the pandemic, venues opt to prepare foods that adhere to a menu they have no control over. All that is being done is preparing food and acting as a collection point. I believe the premises then gets a cut of sales for being the third party. As for the government, I read a blurb on my phone yesterday but have yet to dig deeper. Apparently Boris is aiming to extend and overhaul street trading and licensing for hospitality. More on that later...
