It’s not really a tricky naming convention :)
I think it’s a great idea. A business iterating and responding dynamically to feedback and what the area needs is a business that stays alive.

I’m looking forward to the brunch option, there aren’t that many in Chiswick. There are a gazillion places to get a pasty and coffee. I’m looking forward to weekend morning walks with the dog, stopping for a tasty brunch and a Bloody Mary on a pavement table watching the world go by. 

And I don’t mean to be rude but I don’t understand why people can be judgemental to the point of critiquing a business owners choice of name for their restaurant. If you have a better idea, business plan and drive to start a business you believe will do better, there are lots of plots available - go for it! And if you don’t like Sam’s concept, that’s ok, then don’t visit.
