Bake the whole fish in a course sea salt overcoat.Put a thick layer of sea salt in a baking tin, lay the whole fish on the salt and cover with more salt.When cooked, allow to cool slightly then crack the crust and remove.Serve however you like it best, or with brown butter and capers. |
