I bake bread quite regularly and do kneading by hand as I enjoy it, the key is in the 'proving' and 2 hours is definitely needed (npi). Also when you're ready to 'knock it back' and shape make sure it's on a lightly oiled surface and you dip your hands in flour.

I know it's quicker and less effort using a machine but to me it seems like cheating and its very therapeutic doing it by hand!
