I go up to Scotland fairly regularly and tend to book last minute so don't generally get it "right" - but If you buy on-line (eg Virgintrains.co.uk run the east and west coast mainlines or thetrainline.com) you can look at journeys - days, weeks or months in advance with all the timetable booking prices clearly laid out.
So - check your journey prices with various booking lead times and see if there are big differences or if you can spot a watershed point increase.
In my experience booking weeks rather than days in advance is 30-40% cheaper. Not sure about the mythical £5 fares though...
