Xylitol occurs naturally in fruits and vegetable fibre and can be extracted from oats, mushrooms, sugar cane and birch. Industrial production uses xylan that is extracted from hardwoods or corncobs. It is then hydrolysed into xylose and catalytically hydrogenated into xylitol.

Not very yummy, is it?
