A restaurant with poor hygiene standards gets no rating at all.

If you look more closely at what makes up the difference between getting one star and five stars it is almost entirely down to document compliance and record keeping and has little to do with what actually happens in the kitchen.

This represents a significant competitive disadvantage to independently run businesses particularly those whose owners don't speak English as a first language. Larger chains of restaurants will have an internal compliance person who will ensure all the necessary boxes are ticked but if you think about it logically which type of business is likely to have the cleaner kitchen - the owner managed independent restaurant with a lot of family on the staff or the large corporation with a huge turnover of minimum wage employees.

The slow but inexorable trend of eating in London to become more anodyne with manufacture concepts like Bills increasingly predominating over single outlet restaurants is probably an unintended consequence of this hygiene rating system.
