Dan, go and stand outside a really good chippy and watch how many customers they have, I think you would be surprised.If you get a reputation, people will travel for miles for good fish and chips.Take a look at The Seashell in Lisson Grove.They have had queues outside their door every day for over 20 years, and they charge about £11 for Cod and chips.It's not just fish and chips, it's all the extras like Scampi etc.In the old chippy we used to make our own sausages, and we would sell a mountain of these things every week.And things like pies, what do you get from a chippy these days if you ask for a pie ? a horrible selophane wrapped tasteless blob.Our pies were made by the local butcher and baked fresh every lunchtime and evening.Like I said Dan, it all comes down to freshness and quality.If you have got both of those things, you can write your own pay check. |
