One of the best uses I have put my slow cooker to is making chicken stock. Once stripped of meat the whole carcase can be put in it with a little water and bay leaves, onion etc. Lid on and leave. If you are quick clearing at the end of the meal you can get back to the table for conversation while it is happening - instead of being left with it at the end of the evening. I used to do this in a pan and was constantly allowing it to boil dry as I multi-tasked and often irritatingly losing it as a consequence. The slow cooker has changed all that. :) Soup made like this is nothing like bought soup. It is wonderful. It is worth doing this in the summer and freezing the stock for use in the winter. It is also a nicer stock to use when using up leftover chicken in a fried rice dish. You just end up with a little bag of loose bones to wrap and put in the food waste bin. You can make the sort of chicken soup that is so comforting and works so well when you have a cold... Mmm |
